We also have a small-scale cheese factory that uses a traditional recipe from the mother monastery in Citeaux, France. The Munkeby cheese is the result of unpasteurized milk sourced from neighboring farms. The maturation period is 7-8 weeks and the cheese won Super Gold during the Cheese World Championships in Trondheim. ost@munkeby.net
